It was my birthday a few weeks ago. I turned 29! No really, I turned 29. But I guess I’ll be saying that forever right? Actually I’m excited to turn 30 next year. 30 sounds legit! 😉 And I have big plans for when I turn 30. My husband will be finishing MBA school, we’ll move and hopefully put some roots somewhere instead of moving every 1-2 years, and buy a house! I have high hopes for 30.
For my birthday I asked my husband to make me some black and white cupcakes. My mother-in-law had them for her birthday last year and they were so delicious! If you’ve ever had a triple chocolate cake, it’s like that with a white chocolate cream cheese frosting on top. So yummy! My husband may have forgotten to put the chocolate chips in when he made them…they were still good, but even better with the chocolate chips. So don’t forget!
These are great for any occasion: birthdays, Valentine’s Day, or when you’re just in the need for a chocolate fix.
Black and White Cupcakes
Ingredients
Cupcake
- 1 Chocolate cake mix
- 1 small box Chocolate pudding
- 1 cup Sour cream
- 4 Eggs
- 1/2 cup Vegetable Oil
- 1/2 cup Water
- 2 cups Chocolate chips
Frosting
- 12 oz Cream cheese softened
- 1/2 cup Unsalted butter softened
- 6 oz White chocolate
- 1 tsp Vanilla
- 1/2 cup Powdered sugar
Instructions
- Turn on the oven to 350.
- Mix all but the chocolate chips well.
- Stir in the chocolate chips.
- Place cupcake liners in a cupcake tin and fill about 3/4 way full. Bake for 18-20 minutes. Use a toothpick at 18 minutes to check for doneness.
Cream Cheese Frosting
- While the cupcakes are cooling, beat the butter and cream cheese together, on medium-high speed for 1-2 minutes.
- On low speed, beat in powder sugar and vanilla extract.
- Turn back up the speed back to medium-high and beat for about 3-4 minutes, until the frosting is light and fluffy.
- Melt the white chocolate. I like to do the quick method in the microwave. Heat for 30 seconds and stir. Repeat until the chocolate is melted. Be careful not to do too much or it will burn!
- On low speed, drizzle the melted white chocolate in the frosting and mix well. Make sure to scrape sides and bottom of the bowl.
- Frost the cupcakes with whatever method you like. These were done with a piping bag.
