I love sugar cookies! And you can really make them for any holiday because there are always cute cookie cutters to use. So to celebrate Valentine’s Day, we decided to make some heart shaped sugar cookies.
And these cookies are so yummy because the frosting is homemade and there’s lemon extract in the recipe! Divine!
Now the dough needs to be refrigerated for 3-4 hours so make sure you make them a few hours before you want to bake them. This is another great recipe I got from my mother-in-law Carolee! The original recipe is double this, but with our small family I cut it in half. So here it is halved and made two cookie sheets full of cookies. If you want a full batch just double everything and use 3 eggs.
Sugar Cookie Recipe
1 cup margarine or butter
1 egg
1 cup sugar
1 tsp vanilla
1 tsp lemon extract (or 2 tsp lemon juice)
3 cups flour
1/2 tsp baking soda
Directions
Mix the first 5 ingredients (all but the flour and baking soda). Then add in the flour and baking soda and mix. Allow the dough to chill in the refrigerator for 3 to 4 hours.
When you’re ready to bake them, flour your work surface and rolling pin. I took about half of the dough and rolled it out very thinly. Use a cookie cutter (or multiple) and cut out your shapes. Place the cookies on an un-greased cookie sheet. Then collect the extra dough and form it into a ball and repeat the process of rolling it out, cutting out the shapes, and recollecting the extra dough. Do this until all the dough is gone and repeat with the second half of the dough.
Then bake the cookies for 8-10 minutes at 375 degrees. (Mine only needed about 8 minutes)
While the cookies are cooling, make some delicious homemade frosting. You can use food coloring to dye the frosting the color you want and use sprinkles or little candies to decorate the frosted cookies.
