Raise your hand if you love pumpkin desserts! MMMEEEEEE!!! That’s one of my very favorite things about fall. Pumpkin and apple everything. Pumpkin pie. Pumpkin bars. Pumpkin Pie Blizzards (which I just tried the other day at DQ…AMAZING!). Apple pie. Apple crumb bars. Caramel Apples. You hungry yet?
I made my first batch of pumpkin cookies recently and they are so yummy. And the best part is…
THEY ARE ONLY 3 INGREDIENTS!
Yup, just 3. Minimal effort required. Which also makes it easy for the kids to help. Each of my three kids could have a part!
Pumpkin Cookies
Ingredients:
1 box Spice cake dry mix
1 15oz can pureed pumpkin
1 cup chocolate chips
Directions:
Mix all ingredients together. Drop spoonfuls of dough onto a cookie sheet and bake at 350 degrees for 12-15 minutes.
That’s it! Pumpkin. Easy. Delicious. Enjoy!

Ooh, I love to make these! I add an egg for a slightly different consistency. More cake like, but so delicious!
