As I was looking through Sweets and Treats I came across some raspberry crumb bars that sounded delicious and thought I would make those to share with you! Berries have been on sale at our grocery store lately, so I definitely wanted to make something with them. I made some apple crumb bars not too long ago (which taste just like apple pie) and these are are a similar idea.
Six Sisters’ Raspberry Crumb Bars
Ingredients:
1 cup sugar
1 tsp baking powder
3 cups all-purpose flour
1 cup shortening
1 egg
dash salt
dash ground cinnamon
Fruit filling:
4 cups fresh raspberries (or frozen- just thaw them first)
1/2 cup sugar
3 teaspoons corn starch
(or you could use a can raspberry pie filling – either one works!)
Directions:
1. Preheat your oven to 375 degrees. Spray a 9×13″ baking pan with non-stick cooking spray.
2. Combine 1 cup of the sugar, flour, baking powder, salt, ground cinnamon, shortening, and egg. The dough will be crumbly.
4. In a medium bowl, combine the remaining 1/2 cup sugar, cornstarch and berries.
7. Bake at 375 degrees F for 35-45 minutes or until the top is slightly brown.Makes 15-18 bars.
