When I think of Mother’s Day, I think of flowers, sunshine, and brunch. With springtime in full swing, a brunch is a great way to spend time with your mom, grandma, sisters, aunts, etc to talk about motherhood and how much you love and appreciate them.
Which is why I have this delicious Coffee Cake that will sure to be a hit!
It’s so easy to make! I made some yesterday and it was all gone this afternoon.
It’s light and sweet!
Ingredients
Cake
2 1/2 cups flour
1/2 cup sugar
2 Tbs baking powder
1/2 cup shortening
1 1/3 cup milk
2 eggs
2 pinches of salt
Crumb Topping
2/3 cup flour
1/2 cup butter (1 cube)
1 cup brown sugar
1 1/2 tsp cinnamon
Directions
Turn the oven on to 400 degrees. Mix all the cake ingredients together. Pour the batter into a greased 9×13 pan.
Make the crumb topping by cutting the butter into the flour, brown sugar, and cinnamon with two knives. You want the butter to be in small chunks so it will melt on the cake. Sprinkle the crumb topping on the cake so it’s completely covered. You don’t have to use all the topping if you feel it’s too much. I just really like the topping. 🙂
Bake the Coffee Cake for 20-25 minutes. Insert a toothpick in the middle and pull it out. If it’s clean then it’s ready.
